Le Speakeasy Restaurant

There are only a handful of vegan restaurants in all of Nice, and one that you MUST visit is Le Speakeasy. This little restaurant was opened by a California native 18 years ago, and became the first vegan restaurant in existence in Nice. The owner is also the server AND the chef – and she is mega talented. The flavours of her cooking reminded me of Thanksgiving dinner – less the animal cruelty! This amazing woman dedicated her life to spreading the vegan message and offering plant-based alternatives to the people of Nice and the tourists who visit each year. It has not been an easy road for her… Owning a small business in France (never mind a vegan restaurant!) is riddled with challenges, harassment, and corruption. If you do not conform – it will not be easy for you. Period. I was truly inspired by her story and she actually mentioned that she’s considering writing a book in the future to create awareness and educate people regarding the challenges she has faced in France, and …

Caju Vegan Restaurant

If you’re looking for healthy, raw, plant-based options in Nice I have the perfect solution for you! There is this incredible little restaurant in Old Town called Caju Vegan. They are not fully raw but have tons of raw options, cold-pressed juices, amazing smoothies, and so much more. It was exactly what Irek and I needed to refuel our bodies after too much wine in Paris! Not only was the food amazing, but the two owners were the loveliest people we’ve come across during our travels in France. They gave us suggestions of where to travel, and just had such beautiful energy. It was so refreshing visiting this restaurant- it had a very similar feel to many of the vegan restaurants we go to in Vancouver- so if you’re in Nice and dying for some high quality plant-based food, you MUST go to Caju Vegan. We are heading back to Nice for a couple of days on the weekend and will most definitely be going back. 🙂 Cheers, Molly xx __________ “Ethical veganism results in a profound …

Meet on Main

Meet on Main

There are a lot of really awesome restaurants on Main Street but my favourite is Meet on Main! I love the chilled out atmosphere, the menu is full of veggie comfort food, and the staff is super friendly… what more could you want? Irek and I spent a few hours there yesterday – he worked on his watch list for the Live Trader session, and I had a business meeting with an awesome company based in the Vancouver area. After we finished our work we stayed another hour to grab a bite to eat! My dish was super yummy! Usually when we go to Meet on Main we both gravitate towards the vegan burgers because they’re sooo good! But I thought I better switch it up last night and instead had a really delicious bowl filled with rice, kale, mushrooms, mung beans, tofu and the best cashew gravy ever! It hit the spot. 🙂 Irek had his usual burger, obviously. If you’re in Vancouver, definitely check out Meet on Main! Especially if you’re leaning towards going …

Nuba Restaurant

Irek and I had lunch in Kitsilano yesterday at a Lebanese restaurant called Nuba. I loved it as soon as we walked in… The ceilings were super high, the paint was chipped, and the floor tiles looked like they had been there for decades. It was rustic and felt like we truly were in a small restaurant in the Middle East. Nuba’s menu is not fully vegan, but there were quite a few good options for us to choose from. I absolutely love falafel… Well, more precisely, I love chickpeas. Roasted chickpeas, hummus, chickpea wraps, chickpeas on salad, in salad, on the side…. you name it. I’ll eat it. So you can imagine how happy I was when I received my plate of food, consisting of chickpeas 3 different ways! YES! If you’re in Kitsilano and craving some healthy Lebanese food (good price + large quantity of food), this is most definitely the place for you! Have a fabulous weekend. 🙂 Cheers, Molly xx __________ “I love living. I think that’s infectious. It is something …

What I Eat in a Day

For breakfast I made some really delicious oat flour pancakes topped with berries and bananas. They’re super easy to make and very healthy. Normally we eat oatmeal for breakfast (90% of the time) but sometimes it’s nice to switch it up for pancakes, or a smoothie to keep things interesting. Lunch in our house usually consists of avo toast and a bowl of soup. Here we have exactly that; avo toast w/ beet hummus and broccoli soup. So yummy! Irek and I are still on our Indian food kick (we’ve been obsessed for the last 2 years and make some sort of Indian dish twice a week consistently). Aloo Ghobi is the current fave right now, starring… potatoes, cauliflower and of course, mushrooms. Mmmmmm. In addition to these 3 meals I also had 3 litres of water w/ lemon, a coffee, a cold-pressed green juice, and a few slices of watermelon. Hope you guys found what I eat in a day interesting! I love being vegan, and eating fully plant-based. There are so many amazing …

Beach Workout

Yesterday Irek and I went to brunch at my favourite restaurant, Heirloom Vegetarian. I just cannot get enough of that place!  After we ate and Irek did some work, we headed to Jericho Beach in Kitsilano, and did a quick 30 minute HIIT workout (sprints, lunges, squats & tricep dips).  So nice to be able to exercise outside! Hope everyone had a lovely weekend and sending lots of love for the week ahead! 🙂 Cheers, Molly xx __________ “Let us try to recognize the precious nature of each day.” – Dalai Lama XIV

Oatmeal Recipe

For the last 5 years I’ve had the same breakfast almost everyday. Oatmeal is super healthy, filling, and delicious. It keeps me nice and full until lunch time and is packed with nutritious ingredients. It also has a ton of fiber, so it’s great for keeping your digestive system on track. Feel free to substitute whatever fruits, nuts, seeds you have on hand. I also opt out of using any syrups/sweeteners as it’s already sweet enough with the fruit. Hope you enjoy! Cheers, Molly xx   Prep time: 5 minutes | Cook time: 20 minutes | Total time: 25 minutes Serves: 2 Ingredients: 1/2 cup steel cut oats 1 tbsp ground flax seeds 1 tbsp wheat germ 1 tbsp cinnamon 1 apple, chopped 2 cups water (or almond milk) handful blueberries Toppings:  2 bananas sliced pumpkin / sunflower seeds hemp hearts / chia seeds walnuts goji berries agave or maple syrup (optional) Directions: Bring 2 cups water to a boil. Add oats, flax seeds, wheat germ, cinnamon, and apple to pot and reduce to simmer …

Vegan Sushi

Yesterday I was craving some vegan sushi and since Vancouver has a bunch of Japanese restaurants there’s tons of options! I started the day with an appointment downtown and then Irek and I just walked along the sea wall admiring the beauty of Vancouver, and did some people watching! There are so many tourists here in the spring and summer, so lots going on! I find that most of the good vegan/vegetarian spots in Vancouver are in Kitsilano.  We made our way there for a late lunch and found this cute little sushi place called Shizen Ya. They use all organic ingredients and are actually the first all natural Japanese restaurant chain in North America! We’ll definitely be going back, the vegan sushi was delicious! Vegan Borscht

I met my boyfriend 6 years ago and was quickly introduced to his mom’s delicious borscht. It’s time to share this recipe, with my vegan take! A couple things to take note of: it’s always better the second day after the flavours have melded together, taste as much as you can during the cooking process and adjust seasonings as needed. Traditionally this soup is served during the holiday season but we love it so much that I make it every couple of weeks. Hope you enjoy & let me know in the comments how it turns out! 🙂 Molly xx   Prep time: 15 mins | Cook time: 50 mins  | Total time: 65 mins Serves: 6 Ingredients: 4 large beets, roasted and diced 4 medium sized potatoes, diced 1 onion, diced 5-6 cloves garlic, minced Water (enough to fill large pot, leaving 2 inches) 2 cubes veggie broth 1/4 cup red wine 1 tbsp apple cider vinegar 1 tsp balsamic vinegar 1 tsp Himalayan sea salt 1 tsp black pepper fresh or dried herbs (basil, cilantro, …

Heirloom Vegetarian

Since it was another stunning day in Vancouver yesterday, Irek and I headed to Kitsilano to soak up the sun. It was so great to see so many people out enjoying the weather, playing volleyball, basketball, walking their dogs etc. Really awesome energy… I love where we live! After we strolled around for a while we decided to grab dinner at my FAVOURITE restaurant in all of Vancouver. It’s called Heirloom Vegetarian and it’s sooo good! Irek got his usual… a veggie burger with yam fries (so predictable lol), and I had a delicious kale caesar salad. My salad was amazing – it had beet chips, capers, cornbread croutons, cashew parmesan, and the best vegan caesar sauce. Mmmmmmm. You guys must go if you live in Vancouver!!!
