The beauty of British Columbia never ceases to amaze me! And now that it’s springtime, there are gorgeous flowers blooming everywhere! 🙂 Irek and I have been to The Capilano Suspension Bridge only once before, just this past winter with our friends from Australia. Unfortunately the day we went it poured rain, so we didn’t get the full experience. Therefore, we decided to venture back this week and check it out while the sun was shining. It did not disappoint. As you can see by the photos, the bridge is surrounded by lush forest and mountains. It’s so beautiful, and so refreshing to be close to nature. I hope everyone who is reading this is able to spend some quality time outside this week and be grateful for the beauty that surrounds us. It’s so lovely to have nice weather in BC again. Five months of straight up rain is a bit much! We’re expecting full sun and 20 degrees this week, which means lots of outdoor workouts for me. 🙂 I’ve been really into fitness and taking care of myself since I met my boyfriend almost 6 years ago. We workout together quite often and have done everything from crossfit, to body weight exercises, to weight training, to yoga. My focus over the last couple of years has been on my yoga practice, but I still do a ton of body weight exercises as well as cardio. Yesterday Irek and I headed downtown to check out the Auto Show. I am not necessarily the biggest car person… but Irek is, so I’m always happy to join him. 🙂 There were some beautiful cars though! I loved the Aston Martin, the Maserati, and this really cute convertible Jag. After we walked around the show for a bit, and Irek took some photos, we headed to this little vegan lunch spot in Gastown. It’s called Meet in Gastown and they specialize in “veggie comfort food”. Irek and I both opted for the veggie burgers… They were super yummy! They also have the BEST vegan spinach & artichoke dip. I have a total obsession with Indian food. This Veggie Korma recipe is one that I have been making EVERY week for the last year! It’s super flavourful, aromatic, hearty and delicious. Oh, and it’s vegan of course. 🙂 Make sure to not get too fussed over the measurements. Each time I make this I switch it up a bit, and it always turns out! So be creative, add your own twist & enjoy. On Friday night we decided to check out a vegetarian restaurant in Vancouver, called The Acorn. It won a bunch of awards and even made it to the top 10 for best vegetarian restaurants in the world by CNN and #2 by the Daily Meal. The Acorn definitely did not disappoint. The flavours were unlike anything I’ve tasted before! This was my boyfriend’s review word for word: “That was the best meal I’ve eaten in my 25 years of being alive.” Doesn’t get much better than that, haha! If you’re from the area and looking for good vegan options this one definitely makes the cut :). They use all local and seasonal ingredients as well, and the menu changes every couple of months. Yesterday my boyfriend and I headed to Whistler to experience one of only four Scandinavian spas in all of Canada. This one is nestled right in the middle of the forest with gorgeous mountain views (that’s the best part)! We spent 6 relaxing hours alternating between the outdoor pools, steam rooms and saunas. Super rejuvenating for the mind and body. If you find yourself in Whistler, The Scandinave Spa is definitely worth checking out, especially after a long day on the slopes. 🙂 Have a lovely day!
