Vancouver Auto Show

Yesterday Irek and I headed downtown to check out the Auto Show. I am not necessarily the biggest car person… but Irek is, so I’m always happy to join him. 🙂

There were some beautiful cars though! I loved the Aston Martin, the Maserati, and this really cute convertible Jag.

After we walked around the show for a bit, and Irek took some photos, we headed to this little vegan lunch spot in Gastown. It’s called Meet in Gastown and they specialize in “veggie comfort food”. Irek and I both opted for the veggie burgers… They were super yummy! They also have the BEST vegan spinach & artichoke dip.

Veggie Korma

I have a total obsession with Indian food. This Veggie Korma recipe is one that I have been making EVERY week for the last year! It’s super flavourful, aromatic, hearty and delicious. Oh, and it’s vegan of course. 🙂

Make sure to not get too fussed over the measurements. Each time I make this I switch it up a bit, and it always turns out! So be creative, add your own twist & enjoy.

Prep time: 15 mins | Cook time: 50 mins | Total time: 65 mins

Serves: 4

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion, finely diced
  • 5-6 cloves garlic, minced
  • 2 tbsp fresh ginger, minced
  • 4 medium sized potatoes, diced
  • 5-6 carrots, diced
  • 2 fresh tomatoes, diced
  • 1/2 can diced tomatoes
  • 1 can coconut milk
  • 1/2 cup lentils, rinsed & drained
  • 1 cup barley (or rice)
  • 3 cups water
  • 2 tbsp turmeric
  • 4 tbsp curry powder
  • 1 tsp garam masala
  • 1/2 tsp hot chilli powder
  • 1 cup frozen veggies (peas, corn etc)
  • handful fresh cilantro, chopped

Directions

  1. Cook one cup barley with 3 cups water + tbsp turmeric. Bring to a boil then reduce to simmer for 40 minutes.
  2. Sauté onion in coconut oil on medium high heat until translucent (about 5 mins). Add garlic & ginger and sauté for another minute or two.
  3. Add potatoes, carrots, fresh+canned tomatoes, and spices (turmeric, curry, garam masala, hot chilli powder) to pan and cook for 10 minutes, still on medium high heat.
  4. Add coconut milk and lentils. Bring down to a rolling simmer and let cook for 25 minutes.
  5. Add frozen veggies and cook for another 10 to 15 minutes (until all veggies/lentils are soft).
  6. Serve over barley & garnish with fresh herbs.

The Acorn Restaurant

On Friday night we decided to check out a vegetarian restaurant in Vancouver, called The Acorn. It won a bunch of awards and even made it to the top 10 for best vegetarian restaurants in the world by CNN and #2 by the Daily Meal.

The Acorn definitely did not disappoint. The flavours were unlike anything I’ve tasted before! This was my boyfriend’s review word for word: “That was the best meal I’ve eaten in my 25 years of being alive.” Doesn’t get much better than that, haha!

If you’re from the area and looking for good vegan options this one definitely makes the cut :). They use all local and seasonal ingredients as well, and the menu changes every couple of months. Mmmm… my mouth is watering!

The Scandinave Spa

Yesterday my boyfriend and I headed to Whistler to experience one of only four Scandinavian spas in all of Canada. This one is nestled right in the middle of the forest with gorgeous mountain views (that’s the best part)!

We spent 6 relaxing hours alternating between the outdoor pools, steam rooms and saunas. Super rejuvenating for the mind and body.

If you find yourself in Whistler, The Scandinave Spa is definitely worth checking out, especially after a long day on the slopes. 🙂

I spent quite a while deciding if I should start one or not, and I have finally concluded that now is the time! 🙂 

I’m Molly, 26 years old from Vancouver, British Columbia, Canada. I love to travel and have lots of future plans for exploring the world! My boyfriend is a forex trader and mentor, working with Infinite Prosperity. Our lifestyle is unusual and we couldn’t be happier about that!
