Sunshine and Cocktails in Nice

A few days ago we did some exploring in Nice and ended up climbing to the top of this hill that overlooks the city and has incredible views of the Mediterranean Sea. It’s so important when traveling to find areas where you can get different perspectives to really appreciate your surroundings. Looking down on Nice from above made me feel entirely grateful for this life, for the people I travel with, and for the ability to experience different places and cultures. After we walked around for a while just soaking in the beauty, we had a few cocktails and some snacks at a little bar by the water… then we proceeded to the beach! This was the first time during the entire trip that we really took some time to just relax and take it easy! It was much needed and we all felt very rejuvenated after. 🙂 Have a beautiful day and keep smiling! Cheers, Molly xx Ps. Happy Father’s Day to my wonderful Dad; I love you so very much. __________ “Life is a …

Caju Vegan Restaurant

If you’re looking for healthy, raw, plant-based options in Nice I have the perfect solution for you! There is this incredible little restaurant in Old Town called Caju Vegan. They are not fully raw but have tons of raw options, cold-pressed juices, amazing smoothies, and so much more. It was exactly what Irek and I needed to refuel our bodies after too much wine in Paris! Not only was the food amazing, but the two owners were the loveliest people we’ve come across during our travels in France. They gave us suggestions of where to travel, and just had such beautiful energy. It was so refreshing visiting this restaurant- it had a very similar feel to many of the vegan restaurants we go to in Vancouver- so if you’re in Nice and dying for some high quality plant-based food, you MUST go to Caju Vegan. We are heading back to Nice for a couple of days on the weekend and will most definitely be going back. 🙂 Cheers, Molly xx __________ “Ethical veganism results in a profound …

Gentle Gourmet Cafe

As I mentioned in my last blog post, vegan places have been somewhat difficult to find in France. That being said, they are around you just have to make a point to find them! On our second day in Paris, we went to a beautiful little restaurant called Gentle Gourmet Cafe. I can honestly say, it was one of the best vegan lunches I’ve ever had… I feel like I say that a lot, but it’s the truth! My sister and I both ordered the risotto which was so unexpectedly flavourful we couldn’t believe it! Irek and my brother-in-law, Shane, had the portobello burgers, which were also delicious and the presentation was just incredible. We also tried the vegan fois grois… I was a bit hesitant seeing as fois grois is duck pate. But it was actually very enjoyable as well, and again such strong and intricate flavours! If you’re in Paris and looking for plant-based options, in my opinion, this restaurant receives a 5 star rating. Have a beautiful day! Molly xx __________ “Vegan food …

Current Workout Routine

Good morning! It’s a beautiful day in VanCity today – the sun is shining and the birds are chirping! It’s a good day to be alive. Take a moment and be grateful. I thought it would be beneficial for some of you if I outline my current workout routine. Lately, I’ve been getting a lot of questions on Instagram and Snapchat regarding this so will go into detail here for you. 🙂 Currently I am working out 6 days a week with one rest day (which varies – I don’t have a set rest day, I just listen to my body and rest when it needs to). So, at the moment I do yoga every other morning for an hour and 15 minutes. I rotate between focusing on heart centre (lots of back-bending/heart openers), throat (poses that focus on stretching the throat), and roots/sacral (focusing on base of spine, so lots of hip openers). I do mostly vinyasa yoga, but also power yoga as well to strengthen my core. The days that I don’t do …

Meet on Main

Meet on Main

There are a lot of really awesome restaurants on Main Street but my favourite is Meet on Main! I love the chilled out atmosphere, the menu is full of veggie comfort food, and the staff is super friendly… what more could you want? Irek and I spent a few hours there yesterday – he worked on his watch list for the Live Trader session, and I had a business meeting with an awesome company based in the Vancouver area. After we finished our work we stayed another hour to grab a bite to eat! My dish was super yummy! Usually when we go to Meet on Main we both gravitate towards the vegan burgers because they’re sooo good! But I thought I better switch it up last night and instead had a really delicious bowl filled with rice, kale, mushrooms, mung beans, tofu and the best cashew gravy ever! It hit the spot. 🙂 Irek had his usual burger, obviously. If you’re in Vancouver, definitely check out Meet on Main! Especially if you’re leaning towards going …

Banana Berry Smoothie

Banana Berry Smoothie Recipe

This is my standby recipe for my banana berry smoothie. I always have these ingredients on hand, so if I’m feeling like a smoothie for breakfast instead of oatmeal, I’ll just quickly whip this together. If this is the only thing you’re having for breakfast and won’t eat again for an extended period of time then this recipe should be considered one portion. Otherwise, you can share this smoothie between two, and have something else to eat as well. Hope you enjoy! 🙂 Molly xx   Yields: 2 Servings Ingredients:  4 bananas 2 cups mixed berries 1/4 cup oats 1 tbsp shredded coconut 1 tsp chia seeds 1 tsp cinnamon 1/2 cup almond milk 2 cups coconut water Directions:  Blend together all of the above ingredients until smooth. Divide into two jars and enjoy! __________ “I can’t think of anything better in the world to be but a vegan.” – Alicia Silverstone

Culver City Food Truck

Culver City Food Truck

Irek and I decided we need to start checking out all the Vancouver food trucks. There are so many around the city and yesterday was our very first time trying one! We had some seriously epic salads from the Culver City food truck. Mine was full of rice noodles, kale, radishes, shredded beet, shredded carrot, hummus, etc. and topped with a super delicious lemon chia dressing. I highly recommend trying some of their deliciousness if you’re in the downtown core! The Culver City truck is usually parked on the corner of Thurlow and Hornby in Coal Harbour (check The Street Food App to confirm location). So, if you work downtown and are leaning towards a more plant-based diet, this is a great option for your lunches. I used to work 2 minutes away from where they’re located, and if I knew about them back then, I would have been eating there everyday! Super healthy, vegan, and very tasty… what more do you need?! Have a beautiful weekend. Molly xx __________ “By eating meat we share the responsibility of …

Nuba Restaurant

Irek and I had lunch in Kitsilano yesterday at a Lebanese restaurant called Nuba. I loved it as soon as we walked in… The ceilings were super high, the paint was chipped, and the floor tiles looked like they had been there for decades. It was rustic and felt like we truly were in a small restaurant in the Middle East. Nuba’s menu is not fully vegan, but there were quite a few good options for us to choose from. I absolutely love falafel… Well, more precisely, I love chickpeas. Roasted chickpeas, hummus, chickpea wraps, chickpeas on salad, in salad, on the side…. you name it. I’ll eat it. So you can imagine how happy I was when I received my plate of food, consisting of chickpeas 3 different ways! YES! If you’re in Kitsilano and craving some healthy Lebanese food (good price + large quantity of food), this is most definitely the place for you! Have a fabulous weekend. 🙂 Cheers, Molly xx __________ “I love living. I think that’s infectious. It is something …

What I Eat in a Day

For breakfast I made some really delicious oat flour pancakes topped with berries and bananas. They’re super easy to make and very healthy. Normally we eat oatmeal for breakfast (90% of the time) but sometimes it’s nice to switch it up for pancakes, or a smoothie to keep things interesting. Lunch in our house usually consists of avo toast and a bowl of soup. Here we have exactly that; avo toast w/ beet hummus and broccoli soup. So yummy! Irek and I are still on our Indian food kick (we’ve been obsessed for the last 2 years and make some sort of Indian dish twice a week consistently). Aloo Ghobi is the current fave right now, starring… potatoes, cauliflower and of course, mushrooms. Mmmmmm. In addition to these 3 meals I also had 3 litres of water w/ lemon, a coffee, a cold-pressed green juice, and a few slices of watermelon. Hope you guys found what I eat in a day interesting! I love being vegan, and eating fully plant-based. There are so many amazing …

OSEA Skincare Giveaway!

A few months ago, OSEA Malibu reached out to me to try their products, and if I liked them, simply spread the word. I have always had very sensitive skin, so I stay away from anything with harsh chemicals, scents etc. Because of this, I am very skeptical of trying new skincare products, and how my skin will react to them. That being said, I did a bunch of research on OSEA and couldn’t find one single bad review. So I was intrigued… OSEA’s products are vegan, organic, cruelty-free and 100% natural… Those 4 things pretty much sum up my criteria when looking for ANY health and beauty products. So suffice to say, I tried the products, and they’re amazing. I spoke to the company recently and they’ve offered to give a gift card to one of my followers so they can experience the products as well! The giveaway details can be found on my Instagram account: @mollycatherinep. I promise you, after trying these products there is a high likelihood that you may have a …
